The Chef.

James is a highly creative chef with strong business and culinary experience, including more than 15 years in the industry.     

He is original from Lima, Perú and has a BS degree in Culinary and Hospitality at the Cordon Bleu Perú (2001). He initiated his career at the renowned Gaston Acurio´s restaurant, Astrid and Gaston.    

In 2004 he obtained a Master degree in culinary arts at the ICIF (International Culinary Institute for Foreigners) in Italy. That year he worked at the prestigious restaurant Agli Amici with 2 Michelin Stars.   

His previous responsibilities included: Executive chef at the Al Grano restaurant (2004-2005), Corporate Chef at the Sonesta El Olivar Hotel (2005-2007) as well as advisor and consultant for Las Casitas del Colca (Orient Express Hotels 2010) in Perú.

 In the year 2007, he was honoured to work at El Celler de Can Roca (3 Michelin Stars / Girona) and at Arzak (San Sebastian, 3 Michelin stars). Back in 2012 he was executive Chef for La Ladrillera restaurant in the south of Lima, being responsible for the development and deployment of the restaurant´s concept, menu and operations (2012 – 2015). 

His vast experience includes several advisories abroad, like Kiru restaurant in Iquique, Chile and  Juan del Mar in Cartagena, Colombia.  

He has participated in different international events representing Perú under the leadership of PROMPERU; such as: Sao Paolo, Brasil; Lisbon, Portugal; Frankfurt and Hamburg in Germany among others.   

In 2015 he was invited by the United Nations to lead as Executive Chef the 70th Gala dinner celebration in Geneve, Switzerland. This dinner party was attended for more than 400 invitees, lead by Mr Ban Ki-moon who has invited James, to lead the 2016 Gala again.   

Currently, James can be seen managing and leading his restaurant COSME, in Lima-Perú. COSME opened his doors in January 2015 and since then has become one of the most popular places in Lima. Its casual but elaborated menu, (better known as comfort food) together with the colourful restaurant design has made COSME one of the favorites in the city.
